Nodaiwa in the Higashi Azabu area of Tokyo is a 200 year old restaurant that has focused on various preparations of unagi through five generations of chefs. At its helm today is chef and owner Kanejiro Kanemato, a master of kabayaki (butterflied unagi that is dipped in a sweet sauce and then broiled) who is 90 years old and shows no signs of stopping. “Right now I say that I’ll stay in the business until I’m 100,” says Kanemato. “But 10 years later I might reach for another 10 years, and so on.” Eater is the one-stop-shop for food and restaurant obsessives across the country. In this video, I am showing how to make Una-don (short for Unagi-don or Unagi-Donburi), but more specifically a variation of Una-don, HITSUMABUSHI, which is a specialty of Tokai region, where I come from. Unagi is an Eal that lives in Japan and almost always eaten over rice as Donburi. Mirin (sweet Sake) * 1 tbsp. sugar * 1 tsp. Sake 1 bowl of rice Kizaminori (finely shredded Nori seaweed sheet) Sansho Japanese pepper if you like Directions: 1. Make a few holes in the eggplants so that they won't explode. Make an incision around the stem end. 2. Place them directly on a stove on a baking rack if you have (or in a frying pan, grill, oven, or toaster oven), then roast until the skins get wrinkly and tender inside. You can also wrap in plastic wrap and microwave at 600w for 2 minutes. 3. Cool until you can handle them, then remove the skins. Make an incision lengthwise and open. 4. Heat the eel sauce in a frying pan until it begins to bubble. Place the eggplants and cook until the liquid is gone. 5. This is named after one of the twelve animals of the Chinese zodiac. The reason why people eat eel on that day is that eating eel is helpful to regain energy and stamina to alleviate suffering from the summer heat. You can make a delicoius unadon after you see my video! 0:54 start cooking 7:34 tasting ~Ingredients for 1 serving~ 1 whole eel 5 Tbsps of sake (for braising) 1Tbsp of sugar 1 Tbsp of mirin 1 Tbsp of sale 1 Tbsp of soy sauce 1 bowl of cooked rice Japanese pepper powder (as you like) Wasabi (as you like) ~Directions~ 1.Remove the head and the tail of the eel and cut it in half. Then rinse the sauce of the eel with water. 2.Wipe it with the paper towel. 3.Make sauce. Put sugar, mirin, sake and soy sauce in a cup and mix them. 4.Place the eel skin-side down in the pan and add sake, and put a lid on the pan, then heat it on medium heat until it comes to boil. Then turn down the heat to low and simmer for about 3 minutes. 5.Put sauce in the pan and boil down a little. 6.Put rice into a donburi bowl, and place the eel on top of the rice and put sauce over them. 7.Sprinkle ‘sanshou’ or Japanese pepper over the eel, and put wasabi on it, as you like. Buddhist eel is one of the best - known Buddhist dishes even among non-veggies in Japan. The original recipe calls for raw Japanese yams. But as you know, I am lazy! Pressing and straining tofu, and grating a Japanese yam(Yamato-Imo, gooeier than Chinese yam.) is a lot of work for me. So I simplified and improved the traditional recipe. I'm using yam powder instead, so I don't need to press tofu, nor grate a yam! And I added a little liquid smoke for charcoal grill flavor. If you can actually charcoal grill after deep-frying, it is a lot better for both flavor and color! When I use Japanese or Asian ingredients, I always wonder if they are available overseas... Is Chinese yam(Yama-imo, 山芋 in Japanese. 山藥 in Chinese) powder available in your country? How about African yam fufu flour?(Yes, it is available in Japan. I'm thinking of trying!) Or something like raw Japanese yam(Yamato-imo, 大和芋 in Japanese.)? I hear that a kind of yam called " Cará” in Brazil is very similar to Japanese yam.
