Kabocha squash is the perfect vegetable to take us from late Summer into Fall, although it is usually available year round. I'll show you three simple and fast ways to make it: roasted and drizzled with maple syrup, melt-in-your-mouth steamed, and a comforting kabocha miso soup. This tender and healthy Japanese pumpkin is easy to make and perfect for vegetarians, vegans, and meat eaters alike. All prep: Don’t remove the skin if you don’t want to. Split and remove the seeds of the squash. They can be cleaned, roasted at 350°f with coated with oil with some salt for 20 minutes. Chop the Kabocha into smaller pieces. Roast: Coat the squash in oil and spices (garam masala, real el hanout, smoked paprika, Aleppo pepper) Roast at 375° for 45 minutes Drizzle maple syrup and serve Steam: Place a bowl in a Steamer and drizzle with Chinese cooking wine or mentsuyu. Steam for 20-30 minutes Miso soup Boil squash for 45 minutes, add Dashi or mushroom powder if desired Add miso paste to the water. Lightly coat a rimmed baking sheet with cooking spray and place kabocha squash, skin side up, on the pan. Pop in the oven and roast for 20-30 minutes or until the squash is tender (you should be able to easily pierce it with a fork). Allow to cool and then scoop out the flesh and set it aside. Heat a large dutch oven over a medium low heat and add the coconut oil. Once the oil has melted, toss in the onions and cook for a few minutes, or until the onions begins o turn translucent. Add in the garlic, ginger, and salt. Cook for one minute, or until fragrant, and then stir in the red curry. Combine everything together and then add in the kabocha squash and the veggie stock. Stir and simmer for 20 minutes, so the flavors can mingle marry together. Remove from heat and allow to cool down a bit. Gently stir the coconut milk into the pot and then working in batches, add the soup to the blender, being sure not to fill the blender more then 1/3 of the way up, and blend until rich and creamy. Repeat until all the soup is done. Return the pot to the stove and heat it up. Serve and enjoy! Makes about 6 cups Sending you lots of LOVE + DELICIOUSNESS!

If you've never tried kabocha squash soup before now is the time friends! Growing up my mom would serve steamed kabocha for breakfast. It's got nutty and sweet undertones and can be enjoyed steamed, roasted, or pureed in soup. It's guaranteed to become your new favorite fall vegetable! 🎶 Cali By: Silicon Estate INGREDIENTS -1 medium kabocha squash, washed and quartered with seeds removed -1 medium onion, roughly chopped -1 carrot, roughly chopped -1 medium potato, roughly chopped -3.5 cups water -1.5 tsp salt -1/2 tsp black pepper -1-2 tbsp Kirkland organic agave syrup to taste (or any sweetner of choice) -1 cup Kirkland organic whole milk -Toasted pumpkin seeds and fried sage leaves to garnish (*optional) DIRECTIONS -Saute onions, carrots,and potato in oil and butter until onions are slightly translucent (about 5 minutes) -Add quartered kabocha to the pot and fill with water. Bring to a boil then reduce the heat and allow to simmer for at least 25 minutes -Turn off the heat and fish out the kabocha and let cool. Once the squash is cool enough to handle, scoop out the insides and return to pot. -Blend everything up with an immersion blender. If using a standing blender, be sure your mixture has cooled before blending then return the blended mixture to the pot. -Turn the stove back on to low heat and add in your milk, salt, pepper, and agave/honey. -Garnish with toasted pumpkin seeds and fried sage leaves (*optional) #shorts #kabocha #kabochasoup #butternutsquash #soup

Roasted Kabocha Squash (See Recipe Below) 🤍 Blog: 🤍 - Serving Size: ~4 servings Ingredients: - 1 small kabocha squash (~1 lb) - 2 tbsp softened butter or olive oil - kosher salt - freshly cracked black pepper - honey Directions: 1. Preheat oven to 400F. 2. Make sure squash is well-scrubbed and clean 3. Cut squash length-wise as shown. 4. Scoop out and discard seeds and stem of squash. 5. Cut squash again length-wise as shown. 6. Place on a foil-lined baking sheet, flat-side down. 7. Scatter bits of butter on squash or drizzle with olive oil. 8. Add salt and pepper. 9. Drizzle with honey. 10. Pop into oven for 30-35 minutes or until squash is fully softened. *Note: Flip squash about 15-20 minutes in. 11. Remove squash from oven after baking. 12. Plate and top with some melted butter or olive oil, honey, and chopped parsley. Serve immediately. You can store leftovers in container in the refrigerator for up to a week or freeze for up to 6 months.
